I have a wonderful eggplant recipe that I have to make for DH...it's the only one he really enjoys...what other favorites are out there for us to try? My eggplants produced (and are still producing) exceptionally well...
Eggplant Italiano
1 ¼ pounds Eggplant
2 medium onions
2 ribs celery
½ cup pitted ripe olives
2 T Olive Oil, divided
1 16oz can diced tomatoes, drained
2 T balsamic vinegar
1 T sugar
1 T capers, drained
1 tsp dried oregano or basil leaves, crushed
Salt/Pepper to taste
•Cut eggplant into 1 inch cubes. Thinly slice onions. Cut celery into 1 inch pieces. Cut olives crosswise in half; set aside.
•Heat wok over medium high heat 1 minut or until hot. Drizzle 1 T oil into wok and heat 30 seconds. Add onions and celery; stir fry about 2 minutes or until tender. Move onions and celery up side of wok. Reduce heat to medium.
•Add remaining 1 T oil to bottom of wok and heat 30 seconds. Add eggplant; stir-fry about 4 minutes or until tender. Add tomatoes; mix well. Cover and cook 10 minutes.
•Stir olives, vinegar, sugar, capers and oregano into eggplant mixture. Season with salt and black pepper. Transfer to serving dish.
Makes 6 servings

KitchenAid food grinder vs. slicer/shredder: which one?
Either the food grinder attachment or the slicer/shredder is offered as a freebie with purchase of a KitchenAid mixer. I just bought a mixer for one Xmas gift (thinking ahead!), and wondered, if you've got one or both of these attachments, which would be your vote for the add-on item?
I don't have the slicer/shredder, as I use my Cuisinart food processor for big jobs (having given up on the whole handheld mandoline thing; I think electricity is a great discovery & intend to use it in my kitchen :D).
I do have the food grinder but honestly keep forgetting about it and have never used it. I got it thinking I would grind up leftover chicken or roast for various other recipes, but there it sits. (I will never make sausage; no interest.)
Online reviews for both attachments are mixed. If you were a young cook (newlywed), which do you think you'd want? I figured slicer/shredder, since at the very least you could shred cheese (even if some reviews say it doesn't work so well on veggies), but maybe I'm missing out on some great uses for the food grinder. Thanks!

Broccoli and Cheddar Chicken Pasta CL 9/16
We liked this,even after numerous modifications.
I used GF brown-rice rotini pasta, sliced chicken/gouda sausage rather than thighs, fresh broccoli florets, regular cheddar rather than Mexican-blend, and skipped the green onions.
If I made it again, I would add the stock mixture to the blender first, then the broccoli. Putting the broccoli in first had some of it end up under the blender blades and not get blended. Not a game-changer but it did make for a chunky mixture.

Instead of adding broccoli florets to the pasta, a double serving is incorporated into the creamy sauce. Heat the broccoli and sear the chicken while the pasta cooking water comes to a boil. The leaner dairy components create a creamy taste without all the added calories and fat or atypical broccoli and cheddar pasta dish.
Yield: Serves 4 (serving size: about 1 1/2 cups)
Total time: 29 Minutes
8 ounces uncooked whole-grain penne pasta
2 cups frozen steam-in-bag broccoli florets
1 cup unsalted chicken stock (such as Swanson)
1 cup 2% reduced-fat milk
2 tablespoons all-purpose flour
Cooking spray
12 ounces skinless,boneless chicken thighs, cut into bite-size pieces
1/2 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
3 garlic cloves,minced
3 ounces preshredded 2% reduced-fat Mexican-blend cheese (about 3/4 cup)
2 tablespoons chopped green onions
1. Cook pasta according to package directions, omitting salt and fat; drain.
2. Heat broccoli according to package directions; cool slightly. Combine stock, milk, and flour in a bowl. Place broccoli and stock mixture in a blender; blend until smooth.
3. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.Add chicken to pan; cook 4 minutes. Add garlic; cook 30 seconds, stirring constantly. Add broccoli mixture to pan; bring to a boil. Cook 5 minutes or until slightly thickened. Stir in pasta, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper. Stir in cheese. Top with green onions.

Finally get a home weekend. I was at the farm yesterday and brought back produce to work with today and tomorrow. 24lbs roma tomatoes for marinara. 50 banana peppers to stuff and freeze. A dozen or so green peppers to stuff and freeze (although I forgot to bring home the tomato juice my parents made so those will have to wait until next week). And I am going to try a new recipe tonight for dinner; finally getting to the Spice-Rubbed Pork Chops with Grilled Zucchini. And probably a new dessert recipe tomorrow. Maybe this pudding.
Pots de Crème Serves 8 ATK
We prefer pots de creme made with 60 percent cocoa bittersweet chocolate (our favorite brands are Ghirardelli and Callebaut), but 70 percent bittersweet chocolate can also be used. If using a 70 percent bittersweet chocolate (we like Lindt, El Rey, and Valrhona), reduce the amount of chocolate to 8 ounces. A tablespoon of strong brewed coffee may be substituted for the instant espresso and water. Covered tightly with plastic wrap, the pots de creme will keep for up to 3 days in the refrigerator, but the whipped cream must be made just before serving.

Cool pots de crème to room temperature, then cover with plastic wrap and refrigerate until chilled, at least 4 hours or up to 72 hours. Before serving, let pots de crème stand at room temperature 20 to 30 minutes. Using hand mixer or standing mixer fitted with whisk attachment, beat cream, sugar, and vanilla on low speed until bubbles form, about 30 seconds. Increase speed to medium; continue beating until beaters leave trail, about 30 seconds longer. Increase speed to high; continue beating until nearly doubled in volume and whipped cream forms soft peaks, 30 to 45 seconds longer. Dollop each pot de crème with about 2 tablespoons whipped cream; garnish with cocoa or chocolate shavings, if using. Serve.

KitchenAid food grinder vs. slicer/shredder: which one?
Either the food grinder attachment or the slicer/shredder is offered as a freebie with purchase of a KitchenAid mixer. I just bought a mixer for one Xmas gift (thinking ahead!), and wondered, if you've got one or both of these attachments, which would be your vote for the add-on item?
I don't have the slicer/shredder, as I use my Cuisinart food processor for big jobs (having given up on the whole handheld mandoline thing; I think electricity is a great discovery & intend to use it in my kitchen :D).
I do have the food grinder but honestly keep forgetting about it and have never used it. I got it thinking I would grind up leftover chicken or roast for various other recipes, but there it sits. (I will never make sausage; no interest.)
Online reviews for both attachments are mixed. If you were a young cook (newlywed), which do you think you'd want? I figured slicer/shredder, since at the very least you could shred cheese (even if some reviews say it doesn't work so well on veggies), but maybe I'm missing out on some great uses for the food grinder. Thanks!

Broccoli and Cheddar Chicken Pasta CL 9/16
We liked this,even after numerous modifications.
I used GF brown-rice rotini pasta, sliced chicken/gouda sausage rather than thighs, fresh broccoli florets, regular cheddar rather than Mexican-blend, and skipped the green onions.
If I made it again, I would add the stock mixture to the blender first, then the broccoli. Putting the broccoli in first had some of it end up under the blender blades and not get blended. Not a game-changer but it did make for a chunky mixture.

Instead of adding broccoli florets to the pasta, a double serving is incorporated into the creamy sauce. Heat the broccoli and sear the chicken while the pasta cooking water comes to a boil. The leaner dairy components create a creamy taste without all the added calories and fat or atypical broccoli and cheddar pasta dish.
Yield: Serves 4 (serving size: about 1 1/2 cups)
Total time: 29 Minutes
8 ounces uncooked whole-grain penne pasta
2 cups frozen steam-in-bag broccoli florets
1 cup unsalted chicken stock (such as Swanson)
1 cup 2% reduced-fat milk
2 tablespoons all-purpose flour
Cooking spray
12 ounces skinless,boneless chicken thighs, cut into bite-size pieces
1/2 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
3 garlic cloves,minced
3 ounces preshredded 2% reduced-fat Mexican-blend cheese (about 3/4 cup)
2 tablespoons chopped green onions
1. Cook pasta according to package directions, omitting salt and fat; drain.
2. Heat broccoli according to package directions; cool slightly. Combine stock, milk, and flour in a bowl. Place broccoli and stock mixture in a blender; blend until smooth.
3. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.Add chicken to pan; cook 4 minutes. Add garlic; cook 30 seconds, stirring constantly. Add broccoli mixture to pan; bring to a boil. Cook 5 minutes or until slightly thickened. Stir in pasta, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper. Stir in cheese. Top with green onions.

Weekend Cooking 8/27-8/28
Finally get a home weekend. I was at the farm yesterday and brought back produce to work with today and tomorrow. 24lbs roma tomatoes for marinara. 50 banana peppers to stuff and freeze. A dozen or so green peppers to stuff and freeze (although I forgot to bring home the tomato juice my parents made so those will have to wait until next week). And I am going to try a new recipe tonight for dinner; finally getting to the Spice-Rubbed Pork Chops with Grilled Zucchini. And probably a new dessert recipe tomorrow. Maybe this pudding.
Pots de Crème Serves 8 ATK
We prefer pots de creme made with 60 percent cocoa bittersweet chocolate (our favorite brands are Ghirardelli and Callebaut), but 70 percent bittersweet chocolate can also be used. If using a 70 percent bittersweet chocolate (we like Lindt, El Rey, and Valrhona), reduce the amount of chocolate to 8 ounces. A tablespoon of strong brewed coffee may be substituted for the instant espresso and water. Covered tightly with plastic wrap, the pots de creme will keep for up to 3 days in the refrigerator, but the whipped cream must be made just before serving.
10 ounces bittersweet chocolate, chopped fine
5 large egg yolks
5 tablespoons sugar
¼ teaspoon table salt
1 ½ cups heavy cream
¾ cup half-and-half
1 tablespoon vanilla extract
½ teaspoon instant espresso powder, mixed with 1 tablespoon water
½ cup heavy cream, (cold)
2 teaspoons sugar
½ teaspoon vanilla extract
Place chocolate in medium heatproof bowl; set fine-mesh strainer over bowl and set aside. Whisk yolks, sugar, and salt in medium bowl until combined; whisk in heavy cream and half-and-half. Transfer mixture to medium saucepan. Cook mixture over medium-low heat, stirring constantly and scraping bottom of pot with wooden spoon, until thickened and silky and custard registers 175 to 180 degrees on instant-read thermometer, 8 to 12 minutes (see photos, below). Do not let custard overcook or simmer. Immediately pour custard through strainer over chocolate. Let mixture stand to melt chocolate, about 5 minutes. Whisk gently until smooth, then whisk in vanilla and espresso. Divide mixture evenly among eight 5-ounce ramekins. Gently tap ramekins against counter to remove air bubbles. Cool pots de crème to room temperature, then cover with plastic wrap and refrigerate until chilled, at least 4 hours or up to 72 hours. Before serving, let pots de crème stand at room temperature 20 to 30 minutes. Using hand mixer or standing mixer fitted with whisk attachment, beat cream, sugar, and vanilla on low speed until bubbles form, about 30 seconds. Increase speed to medium; continue beating until beaters leave trail, about 30 seconds longer. Increase speed to high; continue beating until nearly doubled in volume and whipped cream forms soft peaks, 30 to 45 seconds longer. Dollop each pot de crème with about 2 tablespoons whipped cream; garnish with cocoa or chocolate shavings, if using. Serve.

I REALLY need help. I am waking up with awful neck pains and such. Our current bed went bad soon after we bought it and we have put inserts on top...but it's now got dips and dents all over it ... making for a not great night's sleep.

I took dinner to my neighbor (and she loves homestyle, never met a carb she didn't love). I had a feeling she would like it, and she did! And leftovers would be good for her the next day or so.
I wanted to make something different for her, so I branched out into the world of gnocchi and sausage.
I portioned out a small amount so I could give it a try. I think this is the one of the few times I've ever had sausage. The other times were when I make a "mistake" and grab the wrong slice at pizza at a party. :D
Cheesy Skillet Gnocchi
Yield: Serves 4 (serving size: about 3/4 cup)
2 teaspoons extra-virgin olive oil
1 (16-ounce) package prepared whole-wheat gnocchi
4 ounces mild Italian sausage, casings removed
1 1/2 cups chopped tomato
2 garlic cloves, sliced
1/4 cup unsalted chicken stock (such as Swanson)
2 ounces part-skim mozzarella cheese, shredded (about 1/2 cup)
1/4 cup chopped fresh basil
Preparation
1. Preheat broiler to high.
2. Heat a large ovenproof skillet over medium heat. Add oil; swirl. Add gnocchi; cook 7 minutes or until lightly browned, stirring occasionally. Place gnocchi in a large bowl. Add sausage to pan; cook 6 minutes or until browned, stirring to crumble. Add sausage to gnocchi. Add tomato and garlic to pan; cook 2 minutes, stirring occasionally. Add gnocchi mixture and stock to pan; sprinkle with cheese. Place pan in oven; broil 2 minutes or until cheese is melted and lightly browned. Sprinkle with basil.

Cheesy Skillet Gnocchi
Falafel Salad, let's just say I could just drink that tahini dressing
When I saw this recipe for Falafel Salad on budgetbytes, and took a quick look at the ingredients, (some of the ingredients: tahini, chickpeas, cilantro, cumin, lemon, and garlic). Oh that was being added to my to try list.
She doesn't add actual falafel to the salad, just the ingredients/flavors, so there isn't any making of actual falafels which makes it really easy to pull together.
And, blew my stop adding recipes since I have more than enough, right out the water. (I am failing miserably at my attempt at that anyway).
Loved it. Another really good recipe from budgetbytes.com. And, that dressing, I could just drink it plain. Ok, slight exaggeration, and I mean slight.
Definitely add the cucumbers as she suggested.
I used couscous since that is what I had (she used bulgur). I've never used bulgur before and I've had it a few times in tabbouleh salad and not a fan. I'm not sure why, perhaps it is the mint (blech) or the grain?
And, don't be cheap on amount of dressing used.

If you live in a small town...
I moved from a big city to a small remote town a few years ago. One strange thing that was different was the way men treated me. It's unnerving the number of "decent" men (the kind others say "great guy" or "nice guy" about) have either come on to me when their wives aren't around or else flirt with me inappropriately (making innuendo since I'm "a chick")
I didn't have this problem in a big city. There were other problems but not this type of cr*p. I'm learning to spot it in advance but it's like using radar, more like a vibe that they'll come on to me. I don't know why this happens. Despite being small, people travel constantly and there are lots of new people who come here for work. It's not like we're locked in with the same crew all the time. If anyone else has experience or insight, please advise.

Two tasty cassseroles
I tried two new casseroles this weekend and both proved to be keepers for me. My favorite of the two was a Yotam Ottelenghi recipe Baked Orzo with Eggplant. I copied it from Smitten Kitchen's website so I will post a link to it from there. I used fresh tomatoes in the casserole and some more on top as my garden has become prolific of late. It was delicious.

The next was from this most recent issue of CL and a surprise hit for me as I am not normally a huge quinoa fan. It was the Broccoli Cheese Quinoa Casserole. It really tasted like a broccoli rice casserole but with quinoa instead which gave it a very appealing slightly earthier/grassier taste that I did not mind here. I did cut the recipe in half and it still makes a lot. It is not heavily "cheesy" so if you are looking for a cheesy comfort food dish, this is probably not it. I also used 1% milk as that is all I had and forgot to buy whole milk. It was just fine as is IMHO.

I made some modifications - I used 1/2 white whole wheat flour, 1/2 cup more zucchini, 1/4 cup less sugar, and 1/2 the glaze. It baked in 45 minutes. I also made mini-loaves which baked in 32 minutes. Next time I'd try 1/2 cup less sugar and a little less olive oil too?

Shrimp and Bean Burrito Bowl
My usual burrito bowl type meals are typically veggie but I decided to pick up some shrimp and try this recipe. I thought it was good - I think largely that I was so in the mood for some shrimp which had a really good flavor (my friend cooked the shrimp on the grill and he added some more ingredients).
I used some leftover brown rice and made some slaw using leftover coleslaw mix (added lime, cilantro ...).
Shrimp and Bean Burrito Bowl
Sweet chili sauce is not too sweet, spicy, or salty--great for an instant glaze on the shrimp, in marinades, or as a dipping sauce for spring rolls or chicken kebabs. Find it in the international aisle of most supermarkets. If you can't find it, sub regular chili sauce (such as Heinz), or skip the sauce and squeeze a lime wedge over top. For a vegetarian main, use cubed tofu instead of shrimp, and use vegetable stock instead of chicken stock in the bean mixture. Serve with Mango-Jalapeño Slaw.
Yield: Serves 4 (serving size: about 1/2 cup beans, 1/4 cup rice, and 6 shrimp)
Ingredients
3/4 cup unsalted chicken stock (such as Swanson)
2 (15-oz.) cans unsalted kidney beans, rinsed and drained
1 1/2 tablespoons unsalted butter
5/8 teaspoon kosher salt, divided
5/8 teaspoon freshly ground black pepper, divided
2 teaspoons olive oil
1 pound medium shrimp, peeled and deveined (about 24)
1 1/2 tablespoons sweet chili sauce (such as Mae Ploy)
1 (8.5-oz.) pkg. precooked brown rice (such as Uncle Ben's)
1 tablespoon chopped fresh cilantro
1 ripe avocado, sliced
2 tablespoons crumbled Cotija cheese
4 lime wedges
Preparation
1. Bring stock and beans to a simmer in a small saucepan over medium heat. Cook 10 minutes, stirring occasionally. Remove pan from heat. Place bean mixture, butter, 3/8 teaspoon salt, and 3/8 teaspoon black pepper in the bowl of a food processor; process until smooth.

I am only going because she came down here, from Maine, when my DH was terminal, and although she didn't arrive until after he died she pitched in and took over cooking and in general was a huge help. But prior to that she had cut off contact with us for seven years because she took umbrage over an email i sent to her mother and copied her on, which included a photo of my new puppy. Her father had just died, and I had spent a lot of time on the phone with my sister in support even though they were divorced and he had been horrible to them. Niece had complained bitterly about him for years and it never occurred to me to send her a formal sympathy note. So she broke off communications, after DH had been especially wonderful to her and we had hosted her and her friends down here for years, and even given her a plot in our own garden. DH was a father figure to her, replacing her own dad. And then she never even broke the silence after he was diagnosed with cancer, about which he was very bitter. He would not have allowed her to come down after that, but my kids and I felt it was time to try to heal the breach so we didn't try to stop her.

So there are people that are going after Clinton bringing up her health, false health records being circulated etc.
But oh man, I saw Sean Hannity segment (he is devoting segments to this) and one of the clips he showed was a slo-mo video of Hillary. Clearly anyone would realize that she was just responding to a bunch of reporters bombarding with her questions, and she was just gesturing that she was being asked questions by the whole bunch of reporters around her.
Anyone could look strange in slo mo. He goes on how one reporter was scared. And he brought on docs to document.
And the pillow controversy.
He even said, it looks seizureresk.
Classy stuff.
So out of the Fox bunch is there one that stoops lower than the rest. Or all about same?

I did cut back on the sugar and used greek yogurt.
Sour Cream Coffeecake Muffins
For these Sour Cream Coffeecake Muffins, fold the batter just four times to swirl in the sugar mixture, not fully blend it.
Cooking Light MAY 2006
yield: 18 servings (serving size: 1 muffin)
Ingredients
• 1/2 cup packed dark brown sugar
• 1/4 cup chopped pecans
• 1 1/2 teaspoons ground cinnamon
• 1 cup granulated sugar
• 1/4 cup butter, softened
• 1/2 cup egg substitute
• 1 cup reduced-fat sour cream
• 2 tablespoons water
• 1 teaspoon vanilla extract
• 1 3/4 cups all-purpose flour (about 7 3/4 ounces)
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• Cooking spray
• 6 tablespoons powdered sugar
• 3 teaspoons fresh orange juice
• Dash of salt
Preparation
Preheat oven to 400°.
Combine first 3 ingredients; set aside.
Place granulated sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 3 minutes). Add egg substitute; beat 3 minutes. Beat in sour cream, water, and vanilla.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and salt in a large bowl, stirring well with a whisk. Make a well in center of mixture; add sour cream mixture. Stir just until combined.
Place 3 tablespoons brown sugar mixture in a small bowl; set aside. Sprinkle surface of batter with remaining brown sugar mixture. Gently fold batter 4 times.
Place 18 paper muffin cup liners in muffin cups; coat liners with cooking spray. Spoon batter into prepared cups. Sprinkle batter evenly with reserved brown sugar mixture. Bake at 400° for 25 minutes or until a wooden pick inserted in center comes out clean. Remove muffins from pan immediately; place on a wire rack. Cool 10 minutes.
Combine powdered sugar, juice, and dash of salt in a small bowl, stirring until smooth. Drizzle powdered sugar mixture evenly over muffins.

Cheesy Skillet Gnocchi
Yield: Serves 4 (serving size: about 3/4 cup)
2 teaspoons extra-virgin olive oil
1 (16-ounce) package prepared whole-wheat gnocchi
4 ounces mild Italian sausage, casings removed
1 1/2 cups chopped tomato
2 garlic cloves, sliced
1/4 cup unsalted chicken stock (such as Swanson)
2 ounces part-skim mozzarella cheese, shredded (about 1/2 cup)
1/4 cup chopped fresh basil
Preparation
1. Preheat broiler to high.
2. Heat a large ovenproof skillet over medium heat. Add oil; swirl. Add gnocchi; cook 7 minutes or until lightly browned, stirring occasionally. Place gnocchi in a large bowl. Add sausage to pan; cook 6 minutes or until browned, stirring to crumble. Add sausage to gnocchi. Add tomato and garlic to pan; cook 2 minutes, stirring occasionally. Add gnocchi mixture and stock to pan; sprinkle with cheese. Place pan in oven; broil 2 minutes or until cheese is melted and lightly browned. Sprinkle with basil.

I wanted to make something different for her, so I branched out into the world of gnocchi and sausage.
I portioned out a small amount so I could give it a try. I think this is the one of the few times I've ever had sausage. The other times were when I make a "mistake" and grab the wrong slice at pizza at a party. :D

Falafel Salad, let's just say I could just drink that tahini dressing
When I saw this recipe for Falafel Salad on budgetbytes, and took a quick look at the ingredients, (some of the ingredients: tahini, chickpeas, cilantro, cumin, lemon, and garlic). Oh that was being added to my to try list.
She doesn't add actual falafel to the salad, just the ingredients/flavors, so there isn't any making of actual falafels which makes it really easy to pull together.
And, blew my stop adding recipes since I have more than enough, right out the water. (I am failing miserably at my attempt at that anyway).
Loved it. Another really good recipe from budgetbytes.com. And, that dressing, I could just drink it plain. Ok, slight exaggeration, and I mean slight.
Definitely add the cucumbers as she suggested.
I used couscous since that is what I had (she used bulgur). I've never used bulgur before and I've had it a few times in tabbouleh salad and not a fan. I'm not sure why, perhaps it is the mint (blech) or the grain?
And, don't be cheap on amount of dressing used.

If you live in a small town...
I moved from a big city to a small remote town a few years ago. One strange thing that was different was the way men treated me. It's unnerving the number of "decent" men (the kind others say "great guy" or "nice guy" about) have either come on to me when their wives aren't around or else flirt with me inappropriately (making innuendo since I'm "a chick")
I didn't have this problem in a big city. There were other problems but not this type of cr*p. I'm learning to spot it in advance but it's like using radar, more like a vibe that they'll come on to me. I don't know why this happens. Despite being small, people travel constantly and there are lots of new people who come here for work. It's not like we're locked in with the same crew all the time. If anyone else has experience or insight, please advise.

Two tasty cassseroles
I tried two new casseroles this weekend and both proved to be keepers for me. My favorite of the two was a Yotam Ottelenghi recipe Baked Orzo with Eggplant. I copied it from Smitten Kitchen's website so I will post a link to it from there. I used fresh tomatoes in the casserole and some more on top as my garden has become prolific of late. It was delicious.

The next was from this most recent issue of CL and a surprise hit for me as I am not normally a huge quinoa fan. It was the Broccoli Cheese Quinoa Casserole. It really tasted like a broccoli rice casserole but with quinoa instead which gave it a very appealing slightly earthier/grassier taste that I did not mind here. I did cut the recipe in half and it still makes a lot. It is not heavily "cheesy" so if you are looking for a cheesy comfort food dish, this is probably not it. I also used 1% milk as that is all I had and forgot to buy whole milk. It was just fine as is IMHO.
