This is certainly nothing fancy but i thought it sounded good for a super quick veggie meal for those days you want real easy, and topping some pita with some ingredients while sipping a cold drink is more than enough "cooking".
I don't have a grill so would have change it up if I made it. IMO even better to grill some pizza dough and then top it.
