I have frozen green beans the last couple of summers and haven't really been happy with the results. I cut them into 1 - 2 inch pieces, blanch them for 2 minutes, dump into ice water until cold, then dry and lay them on cookie sheets to freeze individually. After they are frozen, I put them into zip-lock freezer bags and then into the freezer.
When I serve them, they get boiled a couple of minutes but end up very soft. Not like the commercial frozen beans that have a bit of bite to them.
Anybody have different results or methods?
